Lemon Chicken with Thyme

Lemon 🍋 Chicken with Thyme! This is one of my favorite easy dishes especially while I’m cutting. This dish has almost no carbs and it’s high in protein. I use a cooking spray instead of olive oil when cooking the chicken to help keep the fat low. I love that I can still get the chicken lightly browned with a light spray of canola oil but avoid the calories of using a couple Tbs of oil. The lemon and thyme add so much flavor, I don’t have to add sauces or cheese for this to standout! I’m also a big fan of dishes that can be made in one dish. The less dishes for me to clean up later, the better! Add this to a salad, steamed veggies, or pasta.

​Ingredients:​

1 lb chicken breast tenderloins (you can use chicken breast but the tenderloins are a consistent thickness and so easy to work with. If you use breasts, I suggest pounding them out to be a consistent thickness so they cook and brown evenly) 

onion powder

garlic powder

salt and pepper

1/2 cup bone broth (I usually use chicken bone broth because I can buy it in bulk from Costco) 

1 Tbs Dijon mustard

4 Tbs fresh lemon juice, leaving a few slices for garnish 

1 Tbs fresh Thyme removed from springs and lightly chopped, leaving a few intact sprigs for garnish

4 cloves of garlic minced (I love garlic so use a few less if you like a more mild flavor)

Instructions:​ 

Lay chicken tenders flat and sprinkle with salt, pepper, onion powder, and garlic powder. Flip and repeat.

I use a cast iron skillet because it heats the chicken evenly ad consistently. Over medium heat lightly spray skillet with cooking spray and once hot, add chicken in one layer. Don’t flip or move chicken in skillet until first side is brown. Repeat with second side. 

Once chicken is cooked through, remove to a plate. Add garlic to skillet until it starts to become fragrant and lightly browned. Add lemon juice and bone broth to skillet and whisk. This will deglaze the skillet getting all the yummy bits off the bottom! Next add Dijon mustard continuing to whisk. Add in thyme. Once everything is mixed, add chicken back to skillet and allow to cook for 5 min so the lemon juice sauce infuses into the chicken. Taste sauce and add any salt and pepper if needed. Serve with a few fresh lemon slices and thyme sprigs. Enjoy!
