Fresh Berry and Beet Salad

I'm a big fan of sweet salads, and am constantly trying to dream up new combinations of fruit to pile on top of my greens. So when I stumbled upon pre-cooked and peeled beets at the store today, I thought why not?! 

Fresh blackberries, juicy strawberries and tasty beets make up this easy and satisfying salad great for any time of the year. When meal prepping, I also like salads because they are quick and easy to make and pack with me to work. 

When you're watching calories or macros, salads can be a slippery slope. Any easy way to tell if your salad is healthy is to think about the number of sources of carbs, fats and protein on your salad. This one has one source of carbs, about 1/2 cup fruit and beets per serving. I chose a healthy balsamic dressing as my source of fat. Then, I topped it off with lean grilled chicken that's been marinated in balsamic dressing. Nice and balanced! 

You always see those "healthy" salads at restaurants. You know, the Cobb salad with eggs, bacon, blue cheese and ranch.  Look at all those sources of fat! So try to use this thinking as you're dining out as well.

Ingredients

1 bag mixed greens

12 oz boneless, skinless chicken tenders (3 oz. per serving)

1 C sliced strawberries

1 C fresh blackberries

3 large pre-cooked and peeled beets

Tessamae's Balsamic Vinaigrette (Or similar dressing that has around 8 g of fat per tablespoon)

 

Directions

1. Place chicken tenders in a Ziplock bag and cover with balsamic dressing, salt and pepper. Let marinate in the fridge for at least one hour. 

2. Pre-heat oven to 350 degrees F. Place marinated chicken on baking sheet and cook for about 20-25 minutes. Tip: Cover your baking sheet with tinfoil for easy clean up! 

2. While chicken is cooking, slice strawberries and beets. Combine in a medium bowl with blackberries. 

3. Fill 4 medium sized bowls with greens. Top each bowl with 1/2 C of the berry and beet mixture and 3 oz grilled chicken (measure with a food scale). Finally, drizzle 1 Tbs of balsamic dressing on each bowl. 

4. Dig in!
