Restaurant-Worthy Avocado Toast
There’s something so scrumptious about avocado toast at a hot brunch spot. I don’t know why, but it’s just so good! This morning, I tried my hand at re-creating this green goodness, staying within my macros. I have to say, it turned out so good! All it requires is some yummy French bread, a little lime juice and garlic, and bam!, you have a home-made meal fit for you, the queen!
The key to eating healthy, for life, is realizing you can eat almost anything you want if you're willing to tweak a few things to make it healthy. In this recipe, with eggs, avocado and olive oil, I needed to balance the amount of fat. I switched one egg out for an egg white and only used 1/4 of an avocado. It's also important to watch out how much olive oil you use. 1/2 tablespoon has 8 grams of fat, which is about half the fat I eat per meal on a maintenance program. To get that yummy restaurant-bread taste, I used French bread. But because it's a thicker slice, I made sure to only use one piece of bread (versus two slices of sandwich bread that come in at about 30 grams of carbs total).
So without further adieu, let's dig into how to whip this baby up.
Ingredients
One thick slice of French bread
1 whole egg and 1 egg white
1/4 of a large avocado
1 handful or arugula or mixed greens
1/4 Tbsp olive oil for the greens and toast
1 squeeze of lime juice
1/4 clove garlic, minced
Salt and pepper to taste
Directions
1. Slice one piece of French bread.
2. Cut avocado in half and place 1/4 into a small bowl. Add squeeze of lime juice, salt and pepper. Mash it up with a fork.
3. Whisk one egg with one egg white and scramble it up. Add salt and pepper.
4. While eggs are cooking, toast your bread in a toaster oven. Then brush a small amount of olive oil and garlic cloves onto the bread. I always keep a jar of the pre-minced garlic in my fridge for quick access.
5. In a small bowl, drizzle a handful of greens with a very small amount of olive oil, add salt and pepper.
6. Now assemble! Spread avocado mixture, and pile eggs and greens onto the toast. Add a dash of flaky sea salt on top if you’re feeling super fancy.
7. Now, sit back and revel in the fact you didn’t pay $14 for toast at the latest brunch spot 😉 yum!
